On May 17th 1939 Susan was born in Springfield, MA to a loving family consisting of mom Sally, dad Sayle, and big brother Richard.

The Zapf Family Christmas parties hosted by Susie and Erik were always a highlight of my year growing up. I remember enjoying the joy of the season, playing ping-pong, the carrolling, and the Lucia celebrations. Susannah Rinker I’m not sure where this was, but I know it’s representative of many wonderful adventures my mom and dad, Lorrie and Lin Pennell, had with Erik and Susie over the years. Thanks to Erik and Susie our family started the tradition of vacationing in Stone Harbor every summer, and I don’t think there was one that didn’t include time on the Zapf’s dock and/or boat. Susie was always so welcoming and tolerated (mostly) my Dad and Erik’s antics. Some of my parents most wonderful travel experiences were thanks to Susie and Erik, and they loved their times together!! I will always remember Susan’s lasagna recipe. It always was served at Old Bag dinners. Our family loved it, still make it today and it was so easy to make compared to traditional lasagna recipes. I will think of Susie every time I make it.
